The house
We opened in 2016 in a former ironmonger’s with two people and a list of nine things. There are nine of us now and about forty things, which is roughly the right rate of growth for a kitchen that wants to know where everything came from. We close on Mondays. The macarons need two days between shell and filling, the laminated dough is rolled the day before it is baked, and nobody should work six days for a pastry.
