A flan is custard baked in pastry and it is the least fashionable thing in any French bakery, which is exactly why it is a good test of one.
Ours is five centimetres deep, made with whole milk and real vanilla — the seeds are visible and they are not there for decoration — and deliberately scorched on top. A pale flan is an underbaked flan.
