A fraisier is a test of one thing — whether the strawberries were any good — and there is nowhere to hide, which is why it only exists here from May to July.
The cream is mousseline, which is pastry cream with butter beaten in cold. It is heavier than a diplomat cream and it is what holds the fruit upright without gelatine.
We do not put the traditional sheet of green marzipan on top. If you want it, ask when you order and we will.
