Seasonal, and we mean it — when the Rhône raspberries stop, this comes off the list rather than switching to imported fruit that tastes of nothing.
The crémeux underneath is white chocolate and raspberry purée set with a little gelatine, which keeps it sliceable without turning it into a mousse. The fruit on top is raw and placed the hour before collection.
It does not travel well and it does not keep. Eat it the day.
