Free from, versus made without
Our Céleste contains no gluten. It is baked in a kitchen where wheat flour is in the air every day. Those two facts are both true and the second one is the one that matters if you are coeliac rather than avoiding gluten by choice.
What we do
Separate area, separate day, separate equipment, first bake of the morning. What we do not do is claim a level of control we cannot prove, because a bakery that says «totally safe» has usually not thought about it.
