Aged forty-eight hours between shell and filling. A macaron eaten the day it is piped is a crisp shell and a wet middle; two days later the moisture has moved and it is one thing rather than two. Every kitchen knows this and most are too busy to wait.
Contains nuts. All macarons contain nuts — the shell is almond — and any shop telling you otherwise is selling something else.

The forty-eight hours is not marketing. I bought these and a box from a well-known place on the same afternoon and the difference in texture was not subtle.
